Mary's Portobello Mushroom Caps
This next recipe is inspired by my favorite meal at a restaurant called Mary's in Vankleek Hill, ON. The combination of portobello mushroom, roasted vegetables, herb and garlic cream cheese and gouda is so amazing, I had to try and recreate the recipe!

Chewy Peanut Butter Chocolate Chip Chickpea Cookies

As we were walking down the hallway to our apartment, the most marvellous smell of perogies filled our nostrils. We immediately craved perogies! We did a quick search online to find out how to make dough (thanks About.com) and used things that we had at our disposal to make the filling. Feta, Spinach & Sun Dried Tomato Stuffed Pork Chops
Sorry for missing a post on Sunday! We're both drowning in school work, but we will try our best to keep posting regularly. This next recipe is a new take on pork chops. Growing up, we always ate pork chops in the plainest way possible: with BBQ sauce. This recipe spices things up a bit by stuffing pork chops with feta, spinach, sun dried tomatoes and lemon zest. The combination of flavors is amazing and goes great with a side of roasted potatoes.

Black Bean Brownies
I've heard of black bean brownies before and had always been intrigued. I was craving something chocolaty so I decided to search up some recipes. I wasn't successful in finding a recipe that I loved since most contained refined sugar and oil. So I decided to experiment and create my own recipe. These brownies have no flour, no refined sugar and no oil. They have a fudgy taste and are definitely a great substitute to high fat and high sugar brownies. At only 100 calories a piece, these brownies make for a perfect guilt-free treat.

Personal Size Mediterranean Pizza with Couscous Crust
Today was one of
those days where pizza was constantly on my mind! After my 5:30 class, all I
wanted was to get home and make a delicious pizza. Now, that would’ve been
fantastic if we didn’t already have leftover cooked couscous. I always find it difficult cooking something
new knowing that I have leftovers sitting in the fridge, waiting to be used up.
Since I was in desperate need of a pizza (only a slight exaggeration), I
decided to attempt making a pizza crust with the couscous that I had. I was
expecting the dough to turn out like my quinoa flax crackers however, since
couscous is much less dense and fluffier; the dough was more like a humus
consistency. Nevertheless, I pushed forward and the pizza turned out amazing!

Healthy Cheesy Quinoa Flax Crackers
I had some leftover quinoa in the fridge and decided to get creative in the kitchen! I wanted to make a recipe utilizing my leftovers but also trying to incorporate my recent discovery and purchase of nutritional yeast. I was very surprised by how delicious these crispy crackers turned out and how incredibly healthy they are. Adding nutritional yeast is optional, the crackers would still taste great without it (not your typical pantry ingredient, but you should give it a try!) however, it gives the crackers a wonderful subtle cheesy flavour without the use of any cheese which is fantastic.

Vegan & Gluten-Free Cashew Mac & Cheese
We love Mac & Cheese! After seeing vegan recipes floating around the internet, we were intrigued by the use of cashews and nutritional yeast to create a creamy cheese sauce. After finding a base recipe from Detoxinista, we tried it out and put our own spin on it to create this Vegan & Gluten-Free Cashew Mac & Cheese. In our opinion, it does have a creamy cheese flavor but, not the same cheesy taste as the traditional dish. This dish is extremely delicious, creamy and full of flavor. It is healthy and contains many nutritious ingredients that aren't in regular mac & cheese. Try it out for yourself!
