Refried Bean & Veggie Lettuce Wrap

Trying to cut down on the bread intake this year? Eat gluten-free or vegetarian? If so, then you should give this next recipe a try! Delicious and nutritious, this is a healthy take on a bean burrito or wrap. 



To a microwavable bowl, add half a cup of refried beans, two tablespoons of light sour cream, a quarter cup of shredded light marble cheese and half a teaspoon of chili powder. Mix well and microwave for 30-60 seconds until cheese has melted. 


Once mixture is warm, divide and spread evenly onto two large romaine lettuce leaves. Concentrate mixture on the center of the lettuce leaves. 



Next, top the leaves each with one tablespoon of diced yellow bell pepper, one tablespoon of diced tomatoes, one tablespoon of sliced black olives and half of a sliced green onion. Fold up the lettuce wraps and enjoy!

Makes 1 serving

Ingredients:

1/2 cup Refried Beans
2 tbsp Light sour cream
1/4 cup Light marble cheese, shredded
1/2 tsp Chili powder
2 tbsp Yellow bell pepper, diced
2 tbsp Tomato, diced
2 tbsp Black olives, sliced
1 Green onion, sliced
2 Large romaine lettuce leaves

Instructions:
  1. In a microwavable bowl, combine refried beans, sour cream, cheese and chili powder. Mix well and microwave for 30-60 seconds until cheese has melted. 
  2. Spread and divide mixture onto the romaine lettuce leaves. Concentrate mixture on the center of the leaves. 
  3. Top refried bean mixture with yellow bell pepper, tomatoes, black olives and green onions. 
  4. Fold up and serve. 
Makes 1 serving. Serving is approximately 260 calories.
