Vegan Nut-Free Cheese Sauce

I stumbled upon a homemade cheese recipe video on youtube by Cooking with Plants. It seemed too easy and too good to be true...so I had to try it for myself. I didn't have any agar agar powder on hand, the thickening and solidifying agent needed to make vegan cheese (it's a vegan substitute for gelatine) so I decided to skip that step and make a nice cheese sauce. I couldn't believe the flavour and texture of this sauce! I used this sauce to make mac and cheese, a mexican salad and some nachos!


All you have to do is add all of the ingredients to a blender and blend. That's it. 

To a blender, add half cup of water,  half a cup of oats, half a cup of mashed white or sweet potato, half a large or three little marinated roasted peppers, a quarter cup of nutritional yeast,  half a tablespoon of paprika, one a a quarter teaspoon of sea salt, a quarter teaspoon of ground pepper, half a teaspoon of garlic powder, half a teaspoon of onion powder and a tablespoon of fresh lemon juice. Top the blender with an additional half cup of water and blend away. 


If you do not half a high power blender, you might want to process the oats in a food processor or blender before hand to make the smoothest sauce possible. 


Serve hot or cold on pasta...



on salad... 



on nacho chips or as a dip!




Vegan Nut-Free Cheese Sauce

Recipe adapted from Cooking with Plants


Ingredients: 

1 cup water
1/2 cup oats
1/2 cup mashed white or sweet potato
1/2 a large or 3 little marinated roasted red peppers
1/4 cup nutritional yeast
1/2 tbsp paprika
1 1/4 tsp sea salt
1/4 tsp ground pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1 tbsp fresh lemon juice 

Instructions:

  1. Add all the ingredients in a blender. Reserve half of the water to top of the blender. 
  2. Blend until smooth.
