Last year, I visited my friends in Toronto and we had a homemade sushi night. It was my first time making sushi and I was shocked by the simplicity of the process. You can customize the filling to your preference, making it easy to please everyone. At first glance it may look difficult, but trust me when I say you need to try it for yourself.

Vegan Stuffed Cigar Bread
Thinking up of a main thanksgiving dish was a bit tricky since I wanted to remain faithful to typical dishes that would be served during the holiday. Thankfully, my mom helped me modify her classic stuffed cigar bread recipe and together, we cooked up this wicked main. It was delicious, especially topped with a generous helping of vegan gravy!

Creamy Vegan Potato Salad
I whipped this up in under 20 minutes the other day before heading out to work and it was so satisfying! I call this a 'garbage' potato salad, since I used up all the things I had leftover in the fridge. So simple, so delicious! You can top it with some hemp hearts or ground flax seed to add some protein!

No Bake Vegan Carrot Cake with Cashew Cream
I spent the weekend at my boyfriend's mom's house and the scenery there is amazing! Trees, plants, koi fish pond... the list goes on! I felt inspired to create a few recipes and this was the first. Every time I go over, I always end up juicing. I decided to create a recipe using the leftover pulp. Using the carrot and apple pulp, I created this no bake carrot cake! It's delicious and makes for a perfect breakfast, dessert or snack.

Trail Mix Energy Bites
Summer is approaching and I'm getting more and more motivated to create new fresh vegan recipes. Last week, I received my first Munch Better snack box in the mail and with it came a variety of yummy treats that I've never tried before. Some of these products inspired me to create new recipes, this recipe in particular being one of my first. I used the Mike & Mike's Organics Goji Sport Mix to make these delicious energy bites! I'm so pleased with the turn out, they are the perfect bite-size pick me up!

Vegan Nut-Free Cheese Sauce
I stumbled upon a homemade cheese recipe video on youtube by Cooking with Plants. It seemed too easy and too good to be true...so I had to try it for myself. I didn't have any agar agar powder on hand, the thickening and solidifying agent needed to make vegan cheese (it's a vegan substitute for gelatine) so I decided to skip that step and make a nice cheese sauce. I couldn't believe the flavour and texture of this sauce! I used this sauce to make mac and cheese, a mexican salad and some nachos!

Salted Caramel Date Sauce
This next recipe is extremely simple and will knock your socks off! Caramel sauce made from only dates and water, how can that possibly taste good may you ask. My non-date loving friends can attest to this sauce's deliciousness. We created this recipe when making our Healthy Chocolate Torte as well as our Healthy Apple Crisp. it adds just the perfect amount of sweetness and caramel goodness. Give it a try! We're sure you wont be disappointed!!

Chia Seed Jam

Healthy Chocolate Torte with Walnut Crust
One of our all time favorite desserts is the Chocolate Ganache Torte from Milestones. Only issue... it's almost 1000 calories a slice. So we asked ourselves, how can we eat this cake everyday? The answer...make our own healthier version!
This recipe is perfect. Literally perfect. The ingredient list is simple: virgin coconut oil, cocoa powder, maple syrup, walnuts and dates. That's it. We'd be ready to bet that you'd have no idea this was healthy if put to a blind taste test. We actually prefer our version of the torte to the original. And for 250 calories a slice, how can you go wrong! Plus, the calories aren't empty calories like the Milestone torte... there's actual nutritional value in this one!
Enough of us blabbing about this torte, you should really try it for yourself! We promise, it won't disappoint!
