Here is our Teriyaki Tofu recipe using cauliflower rice. You can definitely make this recipe with regular rice, couscous or quinoa.
Teriyaki Tofu with Cauliflower Rice
serves 2
Ingredients:
1 cup
diced extra firm tofu
1 tsp
extra virgin olive oil
1 cup
finely chopped broccoli
½ cup
grated carrot
2 cups
of riced cauliflower
½ cup
sliced green onion
¼ cup alfalfa
sprouts
Marinade
¼ cup
soya sauce
¼ cup
water
2 tbsp
maple syrup
3 tbsp
brown sugar
1 minced
garlic clove
½ tsp
minced ginger
Method:
- Whisk together all marinade ingredients. Place diced tofu in the marinade and let sit for 15 minutes.
- Add oil to a large skillet over medium heat. Add tofu with marinade and cook for 3 to 4 minutes per side until tofu has browned.
- Add broccoli and carrots. Cook for 2 to 3 minutes until vegetables have softened.
- Add cauliflower rice and green onions. Toss until cauliflower is heated. Remove from heat and top with sprouts.
