Teriyaki Tofu with Cauliflower Rice

Cauliflower rice is a great alternative for those who are trying to eat a low carb diet. The Minimalist Baker easily explains how to make your own with beautiful pictures. 

Here is our Teriyaki Tofu recipe using cauliflower rice. You can definitely make this recipe with regular rice, couscous or quinoa.  

Teriyaki Tofu with Cauliflower Rice
serves 2


1 cup diced extra firm tofu
1 tsp extra virgin olive oil
1 cup finely chopped broccoli
½ cup grated carrot
2 cups of riced cauliflower
½ cup sliced green onion
¼ cup alfalfa sprouts


¼ cup soya sauce
¼ cup water
2 tbsp maple syrup
3 tbsp brown sugar
1 minced garlic clove
½ tsp minced ginger

  1. Whisk together all marinade ingredients. Place diced tofu in the marinade and let sit for 15 minutes.
  2. Add oil to a large skillet over medium heat.  Add tofu with marinade and cook for 3 to 4 minutes per side until tofu has browned.
  3. Add broccoli and carrots. Cook for 2 to 3 minutes until vegetables have softened.
  4. Add cauliflower rice and green onions. Toss until cauliflower is heated. Remove from heat and top with sprouts.
