Roasted Garlic Parmesan & Lemon Chickpeas

Looking for a salty, crunchy treat? Then you should try these Roasted Garlic Parmesan & Lemon Chickpeas. Roasting the chickpeas gives them an amazing crunch! Combined with parmesan cheese, garlic and lemon, these crunchy chickpeas are sure to leave you wanting more. 



This recipe is super easy to make! Strain a can of no-salt added chickpeas and rinse with water. If you have lots of time on your hands, you can remove the chickpeas from their shells, but this step is not necessary. 


Pat them dry using paper towel, then spread them on a baking sheet lined with parchment paper and coated with a bit of cooking spray. Pop in the oven at 375°F for 35-40 minutes until they brown and become crunchy (you can taste test them to see if they're crunchy enough for your liking). 


Transfer chickpeas to a bowl, and toss with one teaspoon of extra virgin olive oil, two tablespoons of grated parmesan cheese, half a teaspoon of garlic powder, a quarter teaspoon of sea salt, a pinch of pepper, and half a teaspoon of freshly squeezed lemon juice. Once mixed well, they're ready to eat!

Roasted Garlic Parmesan & Lemon Chickpeas
Makes 2 servings

Ingredients:
1 can Chickpeas, no-salt added
1 tsp Extra virgin olive oil
2 tbsp Parmesan cheese, grated
1/2 tsp Garlic powder
1/4 tsp Sea salt
Pinch of freshly ground pepper
1/2 tsp Freshly squeezed lemon juice

Instructions:

  1. Preheat oven to 375°F.
  2. Strain chickpeas and rince with water (you can remove the shells if you'd like by it is not necessary). Pat dry with paper towel. 
  3. Spread chickpeas onto a baking sheet lined with parchment paper and coated with cooking spray.
  4. Bake for 35-40 minutes until chickpeas have browned and are crunchy. 
  5. Transfer chickpeas to a bowl and toss with olive oil, parmesan cheese, garlic powder, sea salt, pepper and lemon juice. Mix well and serve.
Makes 2 servings. Each serving is approximately 275 calories.
