Healthy Creamy Kale & Sweet Potato Soup

Ok, this next recipe is AMAZING! Definitely wasn't expecting it to turn out this great when I made it right before my class today. Filled with superfoods such as kale and sweet potatoes, this is a guilt free, healthy, creamy soup that will take you under 20 minutes to make. Perfect for those cold days!




First, you'll peel and dice up one cup of sweet potatoes. Take two cups of baby kale and remove stems. 


In a pot, mix together sweet potatoes, kale and three cups of low sodium vegetable broth. Bring to a boil, cover and let simmer on high for 15 minutes.


Pour mixture into a blender and blend until smooth. Serve and enjoy!


Healthy Creamy Kale & Sweet Potato Soup
Makes 1 serving

Ingredients:
1 cup sweet potato, peeled and diced
2 cups baby kale, stems removed
3 cups low sodium vegetable broth

Instructions:

  1. Combine all ingredients in a pot, and bring to a boil. Cover and let simmer on high for 15 minutes.
  2. Remove from stove and add mixture to a blender. Blend until smooth. Serve.

Makes 1 serving. Serving is approximately 205 calories.
