Apple Cranberry Banana Oatmeal Muffins


Who doesn't love a soft, warm, moist muffin? These Apple Cranberry Banana Oatmeal Muffins are sure to do just that, plus be a little friendlier on your waist line! Low in calories and sugar, this makes for a perfect snack, dessert or side to your typical breakfast. 




You'll start off by preheating your oven to 375oF. In a bowl, mix together one and a half cup of oats, one and a half mashed ripe bananas, half a cup of unsweetened vanilla almond milk, one large egg, half a teaspoon of baking powder, half a teaspoon of vanilla extract, one peeled and diced granny smith apple and two tablespoons of dried cranberries.


Once mixed, pour batter into lined muffin tins lightly coated with cooking spray. Bake for 30 minutes and let cool. Serve and enjoy!



Apple Cranberry Banana Oatmeal Muffins
Makes 10 muffins

Recipe adapted from greenlitebites

Ingredient:

1 ½ cups Oats
1 ½ Ripe bananas, mashed
½ cup Unsweetened vanilla almond milk
1 egg
½ tbsp Baking powder
½ tsp Vanilla extract
1 Small granny smith apple, peeled and diced
2 tbsp Dried cranberries

Instructions:
  1.  Preheat oven to 375oF.
  2. Mix all the ingredients together.
  3. Pour batter in lined muffin tin lightly coated with cooking spray. Batter can be divided into 10 cups.
  4. Bake in the oven for 25 minutes.
  5. Remove from oven and let cool. Once cooled, remove muffin cups and serve.

Makes 10 muffins. Each muffin is approximately 70 calories.
