Pineapple BBQ Pork Chops


Add a kick to your pork chops with pineapple! This recipe combines fresh pineapple, red onion and cilantro to create the perfect blend of fresh ingredients to this savory dish. 



First, you'll heat up a skillet on medium heat. Drizzle with a quarter teaspoon of extra virgin olive oil and add one cup of freshly diced pineapple, a third cup of diced red onion and one tablespoon of freshly chopped cilantro. Cook for 5 minutes, then add two tablespoons of your favorite light barbecue sauce. Mix well and continue cooking until pineapple is tender.


Once pineapple is tender, add two pork chops to your skillet, adding sea salt and pepper to taste. Cook until pork chops are browned and ready. Remove from skillet and drizzle with sriracha sauce (or any hot sauce). Serve and enjoy! Tastes great pared with Cauliflower Mashed "Potatoes"


Pineapple BBQ Pork Chops
Makes 2 servings

Ingredients:

1 cup Fresh Pineapple, finely diced
1/3 cup Red onion, diced
1 tbsp Cilantro
2 tbsp Light BBQ sauce
¼ tsp Extra virgin olive oil
2 Pork chops
Salt and pepper to taste
Sriracha sauce to garnish

Instructions:
  1. In a heated skilled lightly coated with olive oil, add pineapple, red onion and cilantro. Cook for 5 minutes on medium heat before adding bbq sauce.
  2. Once pineapple is tender, add pork chops to the skillet. Add salt and pepper to taste.
  3. Once pork chops are cooked, remove from pan and plate. Add sriracha to taste.

Makes 2 servings. Each serving is approximately 235 calories.
