First, you'll thinly slice up one cup of mini yellow potatoes. Next, you'll toss them in a bowl with half a teaspoon of extra virgin olive oil and sea salt.
Cover a microwaveable plate with parchment paper and spread out chips. Microwave on high for 6 minutes. Keep adding 1 minute and check chips until they brown. Be careful: they can easily burn! If you make a smaller batch, start off at 4 minutes and keep adding 1 minute until they brown.
Let cool for a few minutes. This will allow them to crisp up. Once cooled, enjoy! ... Like I said, your life will be changed forever.
Healthy Microwave Potato Chips
Makes 1 serving
1 cup Thinly sliced mini yellow potatoes
1/2 tsp Extra virgin olive oil
Sea salt to taste
- Combine all ingredients in bowl.
- Line a microwaveable plate with parchment paper. Spread out chips onto plate.
- Microwave on high for 6 minutes. Keep microwaving in 1 minute intervals until chips are browned. Note: keep an eye out on the chips cause they can easily burn. If you make a smaller batch, microwave for 4 minutes and keep adding 1 minute until they brown.
- Let cool for a few minutes (this will make them crispy!) and serve.
