Healthy Breakfast Burrito


Full of flavor, this is a great healthy alternative to your typical fast food breakfast burrito. 




First, start cooking two slices of turkey bacon according to the directions on the package.

Next, in a frying pan coated with one teaspoon of extra virgin olive oil, cook a third cup of bell peppers on medium heat until tender. Add in half a cup of egg whites and mix together. Add salt and pepper to taste.


Once the egg and pepper mixture as well as the turkey bacon are cooked, it is time to assemble your burritos. Place a slice of turkey bacon in the center of each whole wheat tortilla and coat each burrito with half of the egg mixture. Add an eight cup of light cheddar cheese and homemade salsa


Fold your tortilla and serve. 


Healthy Breakfast Burrito
Makes 2 servings

Ingredients:

2 Whole wheat tortillas
2 Slices extra lean turkey bacon
½ cup Egg whites
1/3 cup Bell peppers, chopped
¼ cup Light cheddar cheese, shredded
1 tsp Extra virgin olive oil
Fresh salsa to garnish (recipe can be found here)

Instructions:
  1.  Cook turkey bacon slices according to directions on package.
  2.  In a frying pan coated with olive oil, cook your peppers on medium heat until tender.
  3.  Add egg whites to your peppers and mix. Add salt and pepper to taste.
  4. Assemble the burritos. Place a slice of bacon in the center of each the tortilla. Coat with eggs, cheese and salsa. Fold and serve. 

Makes 2 servings. Each serving is approximately 205 calories.
