Oatmeal Apple Raisin Muffins

Hey everyone! It's been a while. We haven't posted any new recipes in almost a year because we were focused on another project: our very first cookbook! Now that this project is nearing completion, we will be focusing on posting new weekly recipes on our blog.


We're kicking things off with these delicious oatmeal apple raisin muffins. To be honest, we are not the best bakers, however we decided to give it a go! These muffins are a perfect grab and go breakfast and turned out to be a hit, especially with our dad! 










Oatmeal Apple Raisin Muffins
Makes 12 muffins

Ingredients:

1 ½ cup all-purpose whole wheat flour
½ cup rolled oats
¼ cup white sugar
¼ cup brown sugar
2 tsp cinnamon
½ tsp nutmeg
pinch of sea salt
⅓ cup melted vegan butter
½ mashed banana
½ cup plant-based milk
¼ tsp vanilla extract
1 cup peeled and diced apple
½ cup raisins
Method:
  1. Preheat oven to 350oF. 
  2. In a large bowl, combine all dry ingredients. 
  3. In a separate bowl, mix together all wet ingredients. 
  4. Slowly combine the wet ingredients with the dry. Fold in diced apple and raisins. 
  5. Grease a muffin tin using vegan butter or cooking spray. Spoon in a quarter cup of mixture in each tin.
  6. Bake for 18 minutes and let cool before serving. Store in the refrigerator.
