Cauliflower Mashed "Potatoes"

Tired of your basic steamed vegetable side dish? Here's a great alternative: Cauliflower Mashed "Potatoes". So creamy and delicious, you'll forget that it's entirely made of cauliflower! 



First, you'll need to boil your cauliflower until it's tender. 



Once cooked, strain and place in a blender with half a clove of garlic, one tablespoon of light cream cheese, half a teaspoon of butter or margarine, one tablespoon of chicken broth and salt and pepper to taste. Blend until smooth. Top with chives and serve immediately. Makes 2 servings. 


Cauliflower Mashed "Potatoes"
Makes 2 Servings

Ingredients:

1/2 Head of cauliflower
1/2 Garlic clove, chopped 
1 Tbsp Light cream cheese
1/2 Tsp Butter or Margarine
1Tbsp Chicken broth or milk
Chives to taste
Salt and Pepper to taste

Instructions:

  1. Cut up cauliflower in smaller pieces and place in a pot of boiling water. Boil for around 8 minutes of until cauliflower is tender. Strain. *Note: if you want a milder garlic flavor, throw the garlic clove in the pot of boiling water with the cauliflower.
  2. To a blender, add cooked cauliflower, garlic, cream cheese, butter, chicken broth, and salt and pepper. Blend until smooth. 
  3. Top with chives and serve. 

Makes 2 servings. Each serving is approximately 50 calories.
