To a blender, add one medium ripe banana, one egg and a dash of cinnamon to taste. Blend until smooth and fluffy.
Line a baking sheet with parchment paper. Pour batter on parchment paper, forming approximately four small pancakes.
Bake in the oven at 350F for about 12 to 15 minutes.
Stack pancakes and layer with natural peanut butter. Serve with a side of fresh fruit.
