Baked Banana & Egg Pancakes

This recipe is all over Pinterest! If you've never heard of it before, it's a healthier alternative to your regular pancake... all you need is a banana and an egg! 

To a blender, add one medium ripe banana, one egg and a dash of cinnamon to taste. Blend until smooth and fluffy. 

Line a baking sheet with parchment paper. Pour batter on parchment paper, forming approximately four small pancakes. 

Bake in the oven at 350F for about 12 to 15 minutes. 

Stack pancakes and layer with natural peanut butter. Serve with a side of fresh fruit.

Makes 1 serving 

Ingredients:

1 Medium ripe banana
1 Large egg 
Dash of cinnamon

Instructions:
  1. Preheat oven to 350F.
  2. Blend together banana, egg and cinnamon until smooth and fluffy.
  3. Line a baking sheet with parchment paper. Pour batter on parchment paper, forming 4 small pancakes.  
  4. Bake for 12 to 15 minutes. 
  5. Stack pancakes and layer with natural peanut butter. 
  6. Serve with a side of fruit.
