Pumpkin French Toast

Just in time for Halloween, these Pumpkin French Toasts are filled with fall flavors. Made as a breakfast or dessert, it's sure to satisfy your sweet tooth.



To start, whisk together one large egg, two tablespoons of egg whites, a quarter cup of pumpkin puree, a quarter cup of unsweetened vanilla almond milk, a quarter teaspoon ground cinnamon, an eight teaspoon ground nutmeg and a quarter teaspoon vanilla extract.



Transfer mixture to a deep dish plate and soak bread into mixture. Cook in a frying pan on medium heat for two to three minutes per side. 


Top off with maple syrup and enjoy!


Pumpkin French Toast
Makes 1 serving

Ingredients:

1 Large egg
2 tbsp Egg whites
1/4 cup Pumpkin puree
1/4 cup Unsweetened vanilla almond milk
1/4 tsp Ground cinnamon
1/8 tsp Ground nutmeg
1/4 tsp Vanilla extract
2 Slices whole wheat bread
Maple Syrup (optional)

Instructions:

  1. In a bowl, whisk together egg, egg whites, pumpkin puree, almond milk, cinnamon, nutmeg and vanilla. 
  2. Transfer mixture to a deep dish plate. 
  3. Soak bread in mixture.
  4. Heat up a frying pan at medium heat, coat with cooking spray and add bread. 
  5. Cook for 2-3 minutes on each side
  6. Serve with maple syrup. 
Makes one serving. Each serving is approximately 275 calories (excluding maple syrup).
