Maple Cinnamon Apple Quinoa Breakfast Bowl

I was in the mood for oatmeal this morning but wanted to use up stuff I already had in the fridge. So I decided to make this Maple Cinnamon Apple Quinoa Breakfast Bowl! It has a similar taste to oatmeal but uses quinoa as the base instead of oats. 



First, you'll peel a granny smith apple, dice it up and place it in a microwaveable bowl. Add a half cup of water to the bowl and microwave covered for 2-3 minutes. Strain and keep aside. 

In a sauce pan, bring half a cup of unsweetened vanilla almond milk and half a cup of cooked quinoa to a boil. Add a quarter teaspoon of cinnamon and a pinch of nutmeg. Let simmer at medium heat for a few minutes until all the liquid has evaporated. 


Next, mix in your apples and one tablespoon of maple syrup. Mix at medium heat until well blended and all liquid is evaporated. Serve and enjoy! 


Maple Cinnamon Apple Quinoa Breakfast Bowl
Makes 1 serving

Ingredients:

1 Granny Smith Apple, peeled and diced
1/2 cup Water
1/2 cup Unsweetened Vanilla Almond Milk
1/2 cup Cooked quinoa
1/4 tsp Ground cinnamon
Pinch of ground nutmeg

Instructions:

  1. In a microwavable bowl, combine diced apples and water. Cover and microwave on high for 2-3 minutes. Strain and set aside.
  2. In a sauce pan, bring almond milk and quinoa to a boil. Add cinnamon and nutmeg and simmer on medium heat for a few minutes until all liquid has evaporated.
  3. Add apples and maple syrup to quinoa mixture. Mix well on medium heat until all liquid has evaporated. Serve. 

Makes 1 serving. Serving is approximately 270 calories.
