Tofu Chili

A perfect Sunday night meal, chili has been a Grey Cup staple in our household for many years. We have made several chili recipes, this one being our newest one using tofu. 


Tofu Chili 
serves 4

Ingredients:

3/4 cup diced white onions
2 minced garlic cloves
1 cup diced red bell pepper
1 tsp extra virgin olive oil
2 1/2 cups tomato sauce 
2 cups canned kidney beans
2 cups canned lentils
1 1/2 cups crumbled extra firm tofu
juice of 1 lime
3 tbsp chili powder
salt and pepper to taste


Method:

  1. Add oil to a large pot over medium heat.
  2. Add onions, garlic, and peppers and cook for 2-3 minutes until the onions are translucent. 
  3. Add remaining ingredients and bring to a boil. Reduce heat and simmer, uncovered, for 20-25 minutes. Remove from heat and serve.
