Vegan Cauliflower and Potato Curry Soup

I've recently discovered Rich Bitch Cooking's YouTube channel and I was instantly addicted! Her recipes are innovated, simple and look incredibly delicious. She has many Indian dishes and it inspired me to try making one of my own. 


This dish is my new favorite. The combination of flavors is divine and it's incredibly simple to make. 





Vegan Cauliflower and Potato Curry Soup
Makes 2 servings


Ingredients
1 cup diced white onion
2 minced garlic cloves
1 tbsp extra virgin olive oil
3 1/2 tsp mild curry powder
1 tsp turmeric
pinch of cayenne pepper
3 cups vegetable broth
2 cups cauliflower florets
1 1/2 cups peeled and diced white potato
salt to taste

Optional toppings
roasted cauliflower florets
fresh herbs
cashew cream

Instructions
  1. Add white onion, garlic, oil, curry powder, turmeric, and cayenne to a pot over medium heat. Cook for 3-5 minutes until onions are translucent and spices are fragrant. 
  2. Add broth, cauliflower, potatoes, and salt to the pot. Bring to a boil and let simmer, covered, on low for 7-10 minutes. Remove from heat. 
  3. Let the soup slightly cool and blend until smooth using a hand blender. Return soup to pot to reheat. 
  4. Optional: top with roasted cauliflower florets, fresh herbs, and cashew cream.
