Bagel with Bell Pepper Omelette Ring & Avocado

I decided to experiment in the kitchen this morning and came up with this next recipe. It's a great recipe to double up and prep in advance for those busy mornings. Simply toast your bagel, spread with avocado and top with your reheated bell pepper omelette ring.  

Start by dicing up two tablespoons of red bell pepper, chopping one third cup of baby spinach, dicing two tablespoons of red onion, and mincing half of a small garlic clove. 


Heat up a pan on medium heat, coat with cooking spray and add vegetables. Add sea salt and pepper to taste and cook for approximately five minutes until veggies are tender. Remove from heat and set aside. 


Slice up four 1/2 inch thick rings from your red bell pepper. Heat up your pan on medium heat, coat with cooking spray and add your pepper rings, cooking for one to two minutes on each side. 


While the pepper rings are cooking, in a bowl whisk together one large egg and one tablespoon of your milk of choice. Add cooked veggies, two tablespoons of light cheddar cheese, sea salt and pepper to taste. Mix well.


Once pepper rings are finished cooking, pour your egg and veggie mixture into rings. Cook for three to five minutes then flip the omelette rings. 


Cook for another one to two minutes and remove from heat.


Toast two everything bagels. Spread one small ripe avocado evenly on each bagel slice and top each slice with a bell pepper omelette ring. Serve and enjoy! 




Bagel with Bell Pepper Omelette Ring & Avocado 

Makes 2 servings

Ingredients

1 Red bell pepper - 2 tbsp diced and 4 pepper rings (1/2 inch slices)
1/3 cup Baby spinach, chopped
2 tbsp Red onion, diced
1/2 small garlic clove, minced
2 tbsp Light cheddar cheese, shredded
1 Large egg
1 tbsp Milk (any kind)
2 Everything bagels
1 Small ripe avocado
Cooking Spray
Sea salt and pepper to taste

Instructions

  1. Heat up a pan on medium heat. Coat with cooking spray and add diced red bell pepper, baby spinach, red onion, minced garlic, and salt and pepper to taste. Cook for 5 minutes or until veggies are tender and remove from heat. 
  2. Heat up a second pan on medium heat. Coat with cooking spray and add your pepper rings. Cook for 1-2 minutes on each side. 
  3. While pepper rings are cooking, in a bowl whisk together egg and milk. Add cooked veggies, cheese and sea salt and pepper to taste. Mix well. 
  4. Once pepper rings are finished cooking, pour egg mixture into rings. 
  5. Cook for 3-5 minutes then flip the omelette rings. Cook for another 1-2 minutes and remove from heat. 
  6. Toast bagels and evenly spread avocado on each slice. Top with bell pepper omelette ring and serve. 
Makes 2 servings. Each serving is approximately 335 calories.
