Chewy Peanut Butter Chocolate Chip Chickpea Cookies

Ok, so we've heard of chickpea cookies before but didn't really think twice about them. Last week, we decided to give them a try (recipe from Texanerin) and let me tell you, they were AMAZING!!! Chewy, moist and delicious! They make for a perfect guilt-free treat! 


Start off by blending/processing one and a quarter cups of rinsed and dried chickpeas using a blender or food processor. 

Once chickpeas are smooth, transfer to a bowl and add in two teaspoons of vanilla extract, half a cup plus two tablespoons of natural peanut butter (we only had crunchy peanut butter on hand), a quarter cup of pure maple syrup, one teaspoon of baking powder, and a pinch of salt. Mix well. Once the dough is well mixed, stir in half a cup of mini chocolate chips. 


Line a cookie sheet with parchment paper and coat with cooking spray. Form your cookie dough into balls and flatten them out on the cookie sheet. 


Bake for 10-15 minutes at 350°F. Let the cookies cool and enjoy. You can store them in the refrigerator or in a sealed container at room temperature.

Makes 16 cookies

Recipe from Texanerin

Ingredients:

1 1/4 cup canned chickpeas, rinsed and patted dry
2 tsp vanilla extract
1/2 cup + 2 tbsp natural peanut butter
1/4 cup pure maple syrup
1 tsp baking powder
pinch of salt
1/2 cup mini chocolate chips

Instructions:
  1. Preheat oven to 350°F.
  2. Using a blender or food processor, blend chickpeas until smooth. 
  3. Transfer chickpeas to a bowl and add vanilla, peanut butter, maple syrup, baking powder and salt. Mix until uniform. 
  4. Stir in chocolate chips.
  5. Line a cookie sheet with parchment paper and coat with cooking spray. 
  6. Form cookie dough into balls and flatten out on cookie sheet. 
  7. Bake for 10-15 minutes. Let cool and serve. Can store in the refrigerator or in a sealed container at room temperature. 
Makes 16 cookies. Each cookie is approximately 130 calories. 

*Please note that these calories are not empty calories that you would find in a regular cookie. The calories come from nutritious ingredients, such as chickpeas and natural peanut butter, as oppose to refined sugar, flour and butter, making these a better option.
