Fresh Tomato Basil Sauce

Once you try this sauce, you will never go back to the canned store bought version! This Fresh Tomato Basil Sauce is only made with a few ingredients but is filled with flavour and will transform any meal. When tomatoes are on sale at the grocery store, buy a bunch, make lots of tomato sauce and can it so you will always have some ready at hand.  




To make approximately one pint of sauce (one mason jar), start by dicing three quarter cups of white onion and mincing two to three garlic cloves. 


In a sauce pan coated with two teaspoons of extra virgin olive oil, cook your onions and garlic on medium heat until they lightly brown. While they are cooking, dice up two and one third cups of fresh tomatoes. 


 Once the onions and garlic are done cooking, add in the diced tomatoes, one tablespoon of basil paste and sea salt and ground pepper to taste. 


Bring mixture to a boil, reduce heat and simmer covered for approximately twenty minutes. If the mixture is very watery, do not cover the sauce pan while it is simmering. 


Transfer mixture to a blender, add in a splash of red wine and blend until smooth.

Fresh Tomato Basil Sauce
Makes one pint of sauce

Ingredients: 

2 1/3 cups Tomatoes, diced
3/4 cup White onion, diced
2-3 Garlic cloves, minced
1 tbsp Basil paste
2 tsp Extra virgin olive oil
Splash of red wine
Sea salt and ground pepper to taste

Instructions:
  1. Coat sauce pan with olive oil and cook onions and garlic until they lightly brown. 
  2. Add tomatoes, basil paste and salt and pepper to taste. 
  3. Bring to a boil, reduce heat and simmer for 20 minutes covered. If mixture is too watery, simmer uncovered. 
  4. Transfer to a blender, add a splash of red wine and blend until smooth. 
Recipe is approximately 210 calories.
